This recipe was inspired by the outstanding Industrial Eats in Buelton, California.
2 large turkey wings (1-1.5lbs each) divided into drumettes and wingettes
1 tsp ground black pepper
1 tbl salt
Mix salt and pepper and sprinkle, covering wings.
¼ cup soy sauce
¼ cup rice wine vinegar
1/3 cup ketchup
12oz can of beer (can substitute with water)
1 tbl brown sugar or maple syrup
1 tsp fish sauce
½ tsp sesame oil
Combine ingredients in a saucepan and bring to a boil, reduce heat and simmer for 30 minutes until sauce reduces and thickens.
Set the right and left burners to low flame and in the low position. No preheat necessary.
Set the wings in the middle of the cooking surface.
Cook with the lid closed for 1.5 hours.
Turn and cook for an additional hour.
After the final hour is up, begin to baste every few minutes for 20 minutes turning wings as you go. Remove and enjoy.
